Brunch 11 a.m. to 3 p.m: Executive Chef Alex Chen and his talented team will present a sumptuous three-course brunch for $65 per person that features appetizers like Clam Chowder (smoked black cod, Yukon gold potato, dill and fennel pollen) and Green and White Asparagus Salad (crispy duck egg, grainy mustard dressing, marcona almond, herb emulsion smoked ikura) and mains such as Crab and Avocado or Canadian Bacon Benedict (free-range eggs, spiced potatoes, brown-butter hollandaise), Roasted Ling Cod (Chiang Mai sausage, stewed peppers, clams, Thai basil ‘pesto’) and Mom’s Best Sunday Roast (slow-cooked prime striploin, Yorkshire pudding, pomme purée, roasted mushrooms, horseradish emulsion, bone marrow jus).
Dinner 5 to 11 p.m: Boulevard will offer a gourmet three-course dinner for $65 per person that features starters such as Slow Poached West Coast Oysters (meyer lemon, northern divine caviar, horseradish mayonnaise) and Beef Carpaccio (Snake River Farms wagyu, capers, parmesan, sourdough crisp, sauce gribiche, herb salad) and main courses like Linguine Alle Vongole (local clams, basil, Fresno chile, D.O.P. San Marzano tomato), Red Wine Braised Pork Cheeks (roasted garlic polenta, spring vegetable ragout, parsley) and Maple Hill Farms ‘Duck a l’Orange’ (dry aged, cumin scented carrots, wild rice, orange jus).
Each service also features dessert-course selections that include either a Chocolate Tart (passion fruit and coconut mousse, piña colada sorbet) or strawberry fromage blanc Cheesecake with cookie crumble during brunch service or Cheesecake with cheese mousse, crumble and strawberry curd following dinner service.

Heritage Asian Eatery Chef and Co-owner Felix Zhou will shine a light on sustainably caught seafood when he teams up with 46 South Fish Co. to host an exclusive ‘Exploring the Pacific Ocean’ stand-up dinner showcasing Hiramasa Yellowtail Amberjack at his downtown counter-service restaurant on Tuesday, May 23 at 6 p.m.
“We’re thrilled to be able to collaborate with Felix once again,” says Mark Urwin, owner of 46 South Fish Co., a Vancouver-based supplier focused on promoting and marketing sustainable New Zealand seafood. “Hiramasa is a beautiful fish for culinary uses and can present both like a salmon or tuna depending on how it is prepared. We can’t wait to see how Felix spotlights the Yellowtail’s unique versatility on the plate and palate.”
Also known as ‘Kingfish’ or ‘Hiramasa’, Yellowtail Amberjack is a top-grade sashimi fish found wild in the waters of the Southern Pacific Ocean and is prized for its firm-yet-silky-smooth texture and clean, sweet flavour. A healthier alternative to Hamachi, each Yellowtail Amberjack that 46 South procures is traceable back to the boat, managed well for future generations and arrives in chefs’ hands 48 to 72 hours after being caught.
“I love cooking with Yellowtail because of its incredible versatility, beautiful texture and delicious taste, not to mention its sustainable fishery,” says Zhou. “I have worked in many different countries throughout my career and the fish from 46 South is some of the freshest and highest quality in the world.”

The Cocktail Lab led by Grant Sceney, the hotel’s creative beverage director, and David Wolowidnyk, Botanist head bartender, offers select libations with a chemist-like sentiment inspired by roots and botanical background.

Executive Chef Hector Laguna’s menu is Pacific Northwest focused rooted by seasonally abundance, sustainably sourced seafood and organic agricultural. You will find lots of root vegetables, oven-roasted halibut with spring vegetables and crab emulsion, and herb crusted lamb rack with green garlic panisse, fava and shallots.
The menu is accompanied by wine director Jill Spoor’s boutique terroir-driven wine program that supports sustainable, organic and biodynamic farming and winemaking practices.
