For the month of February, Nomss is excited to partner with FoodiePages to feature the February Chef’s Box curated by David Gunawan of Farmer’s Apprentice in Vancouver. The CHEF’S BOX Subscription is a monthly subscription service that delivers small batch Canadian foods to your door, hand-picked by a top Canadian chef.

David Gunawan developed two brunch themed recipes this month. Chai Spiced French Toast, Canadian Caesar and a Pot Roasted Chicken Recipe with Porcini Mushrooms, Poached Egg and Hollandaise Sauce.

I love Chai Tea lattes so much and this is the prefect combination of spices with a heart warming French Toast for breakfast!

Chai Spiced French Toast Recipe

Serves 4 people

Ingredients:

  • 4 slices of bread, 1 inch thick, preferably brioche
  • 50g sugar
  • 1/2 cup of whole milk
  • 1/2 cup cream
  • 2 tbsp Star Anise Chai tea from Pluck Tea
  • 1 tsp vanilla
  • Pinch of salt
  • 4 large eggs
  • 1-2 Tbsp butter, unsalted

Method:

1. Steep the Star Anise Chai tea in 1/2 cup of boiling water for 5 minutes. Drain the tea leaves off and add the remaining tea to a medium sized bowl.
2. Beat the sugar, whole milk, cream, vanilla, salt and eggs into your bowl of chai tea.
3. Place your bread slices on a deep baking sheet and poor your mixture overtop to soak the bread. For best results, soak the bread overnight, leave covered in the fridge.
4. In the morning, preheat your oven to 350F.
5. Heat the butter in a hot skillet. Pan fry both sides until golden brown.
6. Place the fried slices on a baking sheet and bake at 350F for 10 minutes so that the egg is cooked all the way through your thick toast.

Steep the Star Anise Chai Black Tea in 1/2 cup of boiling water for 5 minutes. Drain the tea leaves off and add the remaining tea to a medium sized bowl.

Beat the sugar, whole milk, cream, vanilla, salt and eggs into your bowl of chai tea. I like to use Rodelle Pure Vanilla Extract and vanilla bean paste. I ran out at home so I picked some up vanilla beans from a nearby supermarket. You will need to split and seed a vanilla bean.

Place your bread slices on a deep baking sheet and poor your mixture over top to soak the bread. For best results, soak the bread overnight, leave covered in the fridge.

In the meantime, preheat your oven to 350F.

We use All-Clad Tri-Ply Stainless Skillet that is safe to just throw in the oven. So we used that instead of having to transfer our fried french toast to a cookie sheet to bake. Just be careful with you take it out to use oven mitts or a thick towel. You don’t want to burn your hands!

Add a thick slice of butter and drizzle with some maple syrup. Best enjoyed hot out of the oven with a killer Classic Canadian Caesar! Followed by Pot Roasted Chicken with Porcini Mushrooms and Poached Eggs.
