The Parker Vancouver is a newly opened Vegetarian restaurant in the ever changing, ever surprising Chinatown / Strathcona neighbourhood. Last excitement in this area was The Union Bar and Phnom Penh behind the street on Georgia. Former Boneta and Corner Suite Bistro Steve Da Cruz and Jason Leizert presents us the new kid on the block.
A lighter note, The Parker Vancouver is a brightly lit environment with a few items on the roster and a full bar.
Eggs Benedict: Two perfectly poached eggs with a creamy yolk floating atop of a slice of blue cheese . Served with a side of arugula and spring greens with a light creamy vinaigrette.
Waffles with poached pear compote: House made waffles are crispy outside and gluten-free soft inside.
The Parker Vancouver has a concept of zero-waste. Recycle and compost everything. There are environmentally friendly and house made ketchup are fresh. Next time we can’t wait for a bite of their Chickpea Fries.
